Who can resist cobbler?! Heck, who can resist something sweet, right. Why is it that every time you R E A L L Y want something sweet, you’re on a diet or something like that. Or worse, you’ve been diagnosed with an Autoimmune Disease called IBS (Irritable Bowl Syndrome) and Leaky Gut Disease…Yep, that’s me alright.
So this recipe was created with an overwhelming urge to dive into my dark chocolate bag….NOT, yet says the Doc!
There are several stages to an Autoimmune Disease and for starters, I wasn’t 100% this was what I had at the time I created this recipe…I thought I had this or something worse. I just knew my body couldn’t process anything other than really mild and soft foods.
Typically when I create recipes, I write them based on (2) people since it’s just me and my hubby…and well I’m not a recipe expert. In fact, I don’t use recipes. I’m not sure if its the fact that I hate following instructions or if its the fact that I hate that I can’t be creative. Either way, here’s a must try , my Raw Pear Cobbler and I really hope you enjoy as much as I did!
Don’t worry if your pears are turning brown on the outside, in fact mine were, they’ll totally be fine!
Ingredients:
2 Pears
3 Tablespoons Coconut Oil (I use this one)
1/8 teaspoon nutmeg (I use this one)
1/2 teaspoon cinnamon ( I use this one)
1 tablespoon coconut butter (I use this one)
1 teaspoon raw honey (use local honey from your area)
Directions:
First, preheat your oven to 415-425 degrees. Next, cut your pears in half or in quarters, or you can even do a mixture of both. Then, place your pears in a baking dish. Place 3 heaping tablespoons of Coconut Oil into a microwave safe dish if it isn’t liquid. Place your coconut oil in the microwave for like 30 seconds or until it liquifies. Next, mix your cinnamon, and nutmeg into your coconut oil to create a liquid mixture. Pour your liquid mixture onto your pears. Bake for about 30 minutes or until pears are brown and tender. Remove from the oven, add coconut butter and honey and dig in!
