Autoimmune Pancakes.
I’ll take a stack, smothered in honey and coconut butter!
So most of you know by now know I have Leaky gut and IBS. Yes, it’s a challenge, especially when you run a business, and half of the time you spend it traveling.
When I fuel my body, which is now on a regular basis, I require more nutrients than what I used to. I’m using the simple foods God gave us to heal my body…that and an amazing Holistic Doctor that I love.
This Autoimmune recipe was before my diagnosis….when I had kind of diagnosed myself…but wasn’t 100% sure.
And yes, I’m just now getting around to share this lip smacking goodness. I communicate this was pre-diagnosis, because I currently can’t have chocolate (Jesus help me) since my doctor started me over in the Autoimmune diet phase.
But I’m seriously counting down the days I can have these yummy Autoimmune pancakes again!
Ingredients:
1 cup cooked organic sweet potatoes
Raw Honey (I choose, local, raw honey)
1 Egg ( I choose local, fresh and organic)
5 tbsp Coconut Flour ( I use this one)
1-2 tbsp Coconut Oil ( I use this one)
Organic Dark Chocolate Chips (I use this one)
1/2 tsp. cinnamon (I use this one)
1/2 tsp. pink Himalayan salt (I use this one)
Directions:
I like to use my handy dandy food processor to combine my eggs, sweet potatoes, spices, and coconut flour and make flour cakes out of mixture. Fry in coconut oil over medium heat. (3-5 minutes)I like to use my Lecreuset pan, so the pancakes cook evenly. Turn on Medium heat to start, pour about 1/4 cup or to your desired size pancake batter in the pan…because this is a little thick. Cook until you see bubbles in the corner, just like regular pancakes. Flip cook for about 3 minutes on the other size. Remove pancakes from the pan, stack (I like to put coconut butter between each stack, insert emoji with tongue out). I topped my with raw honey and organic dark chocolate. But make sure you follow your guidelines when it comes to your Autoimmune diet.
