Okay, so…I became obsessed with Acai Ceral Bowls two years ago, when I stumbled upon this little place in Miami. It was this modern beachfront health food store and I was hot and hungry.
It gave me an instant burst of energy, and was so tasty! Even the hubs like it. I loved the fact that is was so pretty to look at (of course I would) I’m a designer who likes to look and get inspired by “all things pretty.”
So with my obsession I created my own version! We’ve been eating these alot around our house lately. I even like to have one right before my spin glass, it gives me that extra natural burst of energy I need so Rubio (our spin coach) doesn’t whip my but too hard on doing intervals on the bike! LOL!
Ingredients:
2 Organic Bananas
3- 5 Organic Strawberies
2 Acai Smoothie packs
1/4 cup grain free granola (i use this one)
1/8 cup nut butter (I use this one)
1 High Powered Blend (I use this one)
1/4 Unsweetened Coconut Milk
1/8 cup all natural coconut, finely shredded (I use this brand)
Run your Acai packets under water for 10 seconds. Next place them in your high powered blender with 1 of your bananas, and your coconut milk and finely shredded coconut. Blend until mixed, but don’t over-blend where its soupy and turns watery. Next chop up your remaining banana and strawberry (you are going to use these for garnish) Pour your acai cereal in a bowl. Top with your favorite toppings like I’ve done, using bananas, strawberries, granola and a dollop of nut butter! Enjoy!
I can’t wait for the Summer, I feel like I’m going to be like the “Mad Acai Berry Bowl Woman” whipping up all kinds of different cereal concoctions…I mean the possibilities are endless and in like 10 minutes you have a gluten free, grain free, paleo, nutritional meal! That’s what I’m talking about!!!
