Peanut Butter and Not Jelly!
My job requires me to be on the go L I T E R A L L Y all of the time!
So…as I am rushing around this week and it’s kind of my first “real” week “back to work” with an event since my diagnosis…I knew I needed to preplan and have something yummy on board while traveling. I wanted something that felt like a guilty pleasure, but gave me energy and meet my diet criteria all at the same time. Which trust me has been quite the challenge to say the least!
And of course part of this “Autoimmune Process” requires you to keep your stress level managed. So I’m thinking super simple snack, that doesn’t require alot of work and is easy to transport.
Yay! I reached the 60 diet re-set mark on my Custom Autoimmune plan. Wooohoo. I also felt like I needed a little celebration snack, so I thought instead of peanut Butter and jelly (since I’ve always hated jelly), why not peanut butter and apple, and add the dark chocolate?!
I can say first hand I truly understand the meaning of being HANGRY….LOL! I just thought I understood this before my diagnosis, but it’s truly a thing. So instead of getting “hangry” while traveling I just fix me a cooler to go and these are one of my go to items I pack.
Now always consult your physician and or follow your Autoimmune diet plan. Some people can and will be able to tolerate dark chocolate and nut butters while others can not!

Ingredients:
1 Organic Apple
1 Packet of Wild Friends Nut Butter (I use this one)
Sprinkle of Dark Chocolate Chips (I use this one)
Directions:
Cut your apple so you can see the star shape (this makes eating it more fun, if you ask me!). Next put a dollop (I say dollop, because a spread of the Wild Friends Nut Butter just isn’t enough, it’s way to yummy!) Next top with Dark chocolate chips or Coconut Chips.
