In lieu of Valentines, what a better way than to celebrate the beloved strawberry, than by making some Strawberry Fritters. These are PERFECT for the love of your life that’s battling an Autoimmune Disease…just be sure to ask their protocol and what stage there in before cooking these. The only thing I can personally recommend omitting is the chocolate, but you should be good to go on everything else. Yum!
This recipe totally brings me back to a family get together I had in the mountains going apple picking! We spent the day picking apples at an orchard up north, and followed that by a cup of cider and some warm apple fritters. So much of my childhood I can reminisce where food is connected to such a sweet memory.
I didn’t want this Holiday season to be any less sweater for me or my hubby just because I’ve been dealing with an Autoimmune disease. I wanted to start the week off with something just as special and to know I don’t live my life any differently than the rest of you….
So, I when on Pinterest scavenger hunt and I ran across an autoimmune recipe for apple fritters and thought I’d switch it up a bit to see how strawberry fritters would turn out, and to my surprise, delicious!!!
Ingredients for Strawberry Fritters : (makes about 7 fritters)
1 Plantain (needs to be really ripe)
5-7 organic strawberries
2 tablespoons coconut oil
1 can organic coconut cream (I use this one)
1 tablespoon dark chocolate (omit in first stages of AIP, I use this one)
1-2 organic strawberries (garnish only)
Directions:
Place your plantain and strawberries in a food processor. (While in the meantime you are heating your coconut oil in a skillet) Drop the plantain and strawberry mixture into hot oil into flat pancake looking dollops. Fry on each side on medium heat about 3-5 minutes, flip and follow suit on the alternate side. Top with a dollop of coconut cream, fresh strawberries, and dark chocolate.
Just remember, check with your doctor or depending on what stage of the AIP reset diet your in, you may or may not can have dark chocolate.
