I know it’s not quite Summer yet, and trust me I’m not rushing it… (it’s been hot enough this week, I’m beginning to wonder how much hotter it can get!)
But, nothing says Summer like peaches and throwing stuff on the grill! Right?! And since it felt like Summer and Summer is right around the corner, I thought what the heck…
Well, I was scrolling through my IG feed and saw a big crate of peaches, and the idea struck me, Grilled Peaches and Goat Cheese, what a combo…. I hopped in my car, and struck out on my mission.
I may or may not have started singing, “Millions of peaches, peaches for free…”
I will stay for peeps like me with Autoimmune Diseases, be careful if you are trying something new… During my re-introduction phase, which I’m still going through, I have found out that Goat cheese in small quantities doesn’t affect me or hasn’t at this point. (I seriously did a happy dance when I found this out!) I mean cheese is like a staple or at least if was for me…
Ingredients:
Fresh Peaches
Organic Coconut Oil (I use this one)
Organic Goat Cheese
Pecans
Raw Organic Honey (optional) – I don’t use this due to me trying to keep my sugar levels low.
Directions:
Baste your grill or the peaches with your Organic Coconut Oil. I actually grilled these indoors, so if you’re doing the same, turn your grill up to medium – high heat. Next flip the peaches upside down, or skin side down, and place on the grill. Grill for about 3-5 minutes, constantly checking. Next remove the peaches from your grill, place dollop of cream on top, and top with pecans.
