Kiwi Fruit Salad
This weather, blah! One day it’s 77 degrees and by night the heater’s running.
I’ve had a runny nose and stuffy head for a couple of days now. So I’m literally juicing, and eating everything green to kick this bad boy to the curb! So needless to say, today it’s like hot as blazes (southern slang) for it’s really hot…and I needed to finish off my pretty kiwis before they went bad, I created this delicious fruit salad!
Ingredients For Salad
1 – 2 cups Arugula
1 Cucumber
1 Kiwi
1 Granny Smith Apple
1 Tablespoon Coconut Oil (I use this one)
1 Tablespoon Raw Honey (use one near you for allergy purposes)
Ingredients For Dressing:
1 Tablespoon Coconut Oil ( I use this one)
1 Tablespoon Raw Honey
2 wedges of organic lime
1/2 granny smith apple juiced
Directions for Dressing:
Juice half of your granny smith apple. Whisk together 1 tablespoon raw honey and 1 tablespoon melted organic coconut oil and 2 wedges of lime. Pour over salad.
