Fruit Bowl Fix: Green Envy
Lately, I think due to the warmer weather we are having with the combination of needing a burst of energy since I started working out again, I’ve been craving bowls of fruit.
I had just went to the grocery, and ran across these kiwi fruit beauties. I was headed to my hour long spin glass when
I haven’t had kiwi in forever, and I never really see organic kiwi at our local grocery stores, so I became inspired to create a green dish, in lieu of it being St. Patty’s Day month…or as I refer to it the month of all things Green.
Ingredients:
2 organic kiwi
1 organic Granny Smith Apple
1 organic Banana
1 Tablespoon Coconut Oil (I use this one)
1 tsp cinnamon
1 Lime
6-8 Fresh organic mint leaves
Directions:
Cut all fruit into even pieces. I like to color group mine (that’s the OCD and Designer in me) but you could mix it up as well. Squeeze 1 wedge of lime or you could do lemon, but I prefer lime with mint over your fruit so it won’t brown as well as to enhance the flavor of the mint. Next, tear off your mint leaves and roll them into a bunch to make it easier for cutting and cut into nice size pieces. Sprinkle the mint leaves on top or next to the apples + bananas. Lastly, Enjoy!
