Soooo, I’ve been kind of stuck on the “bowl kick” lately! Have you?! From Soba Noodle bowls, to Acai Fruit bowls, to well…my own concoctions.
I came up with this bowl, because the start to my mornings I’m in need of getting my healthy fats in, my fiber and protein. This perfect breakfast balance is what keeps me going and of course it’s super easy…because let me remind you again, (insert cringe) I HATE COOKING.
Yes, I’m a southern girl, and yes my Mama cooked E V E R Y S I N G L E meal we ate and yes my sister is a Home Economics Teacher and she teaching cooking. But, let’s face it I didn’t get that gene in the family.
Whatever I can fix, that’s quick, but Healthy, I’m in!
So, here’s to quick + healthy mornings or early afternoons’ at “The Burton’s Household!
1 Organic Sweet Potato (or Spinach, or Kale, or other veggie of your choice)
4 Organic Grass-Fed Eggs
2 Tablespoons Organic Coconut Oil (I use this one)
1 Organic Avocado
Place 2 tablespoons of Organic Coconut Oil in Skillet. Crack Eggs and cook as you please. (We eat ours fried hard.) While your eggs are cooking, slice your avocado and cook your sweet potato in the microwave (5 – 6 minutes for one) typically does the trick! Next, remove your egg, place along side your sliced avocado. When cool, slice your sweet potatoes and place in your bowl. I divide the coconut grease and pour over the remaining bowls (because Coconut oil is soooo good for you!!!) Finally top, with Himilayian Salt. Eat + Enjoy
