Our Cozy Valentines Day
Whew! What a week…let me tell you. Of course I mean that in a good way. Just crazy busy!!!
I have felt human the last two weeks, and trust me that’s saying ALOT when you’re dealing or have been dealing with an Autoimmune Disease. Especially when I felt like death warmed over for quite some time (Sorry for such the mental picture), but that’s just how I felt, and if you’ve been here you know.
My life will be SUPER CRAZY the next two weeks, and yes at times like these I’ve learned to say to heck with an immaculately clean house… Instead I buy paper plates (to alleviate washing or loading the dishwasher), and my laundry will just have to pile up, but that’s what a door is for right?!
We’re slammed working on Wine, Women and Shoes, a national fundraising charity that raises money in our area for our local Hospice and we’re planning and designing this years Bridal Show for the Golden Isles. Both events are on the same weekend, (what, what?!) which means I’ll be pulling a double back event. I’m cringing somewhat because I’m interested to see how my body cooperates for the first time this year with a busy weekend and…me struggling with the Autoimmune issue…
However, one thing you can rest assured, I will NOT skip out on for Valentines, is eating chocolate SOMETHING and a pretty table-scape to celebrate.
SO on our Cozy Valentine’s Day in, I’m sharing two decadent recipes that are sure to please the Non-AIP’er and the AIP’er!!!
SO…of course I went on a Pinterest binge to find the most chocolaty chewy AIP brownies out there and this is when I ran across Grazed and Enthuzed and the recipe she had come up with!!!
At first when I read it called for blueberries, I was a little skeptical, and I had never even used
Chocolate Faux Brownies
3/4 cup frozen Blueberries, thawed
1/2 cup + 2 Tbsp Carob powder (I use this one)
1/4 cup softened Coconut Butter ( I use this one)
1/4 cup Coconut Sugar ( I use this one)
1 Gelatin Egg ( I use this one)
1 tsp Cream of Tartar
1/2 tsp Baking Soda
1/4 tsp Sea Salt
Directions:
Preheat the oven to 350 degrees. Grease an 8 x 5 glass dish or loaf pan with coconut oil. Combine all ingredients except the gelatin egg in a high speed blender until smooth. Next, prepare the gelatin egg: Whisk together 1 tbsp gelatin and 1 tbsp tepid water (that equal parts very hot water and very cold water). Vigorously whisk until all combined. The batter will look very dark and a bit drier than traditional brownie batters. Then, spoon batter into HALF of the loaf pan. This creates 4 thicker browsers and are much more delicious than the thinner brownies if you use a whole loaf pan.
Bake for 21-23 minutes or until the top of the brownies have formed a light crust and feel slightly firm.
Let cool a couple of minutes prior to eating.
Garnish with a scoop of Coconut Cream!
Special Notes: If you don’t quite have enough Carob Powder you can use a little Carob Nibs as well, but it will make the brownies a tad less sweeter and could have a bitter
His + Hers Dates
No pun intended. LOL! No actually this is a recipe I came up with so my honey and I could both enjoy eating somewhat of the same thing! Since lately I’ve been making separate dishes for us to eat.
Ingredients:
6 Organic Dates ( I use this one)
3 Slices Organic Bacon
3 Tablespoons Organic Coconut Butter (I use this one)
Directions:
First, slice the top of the date (careful not to cut all the way through it, just on the top, and pull the pit out.) Next stuff the pit with as much coconut butter as you desire. Next, wrap half of the pits in bacon and place a toothpick on top to hold the bacon in place.
Once again, this year my motto is try and use what you have around the house…don’t kill yourself running all over the place. So I pulled from my little handy basket of props and decor these beautiful oyster shells garlands, gold candlesticks,which were originally silver, until I went spray painting crazy for an event. I’m referring to this theme as my whimsical Valentines.
I did pick up the bow and arrow cocktail napkins, toothpicks, and straws in a party pack at my favorite go to place, of course TJ Maxx…but my excuse it that I was already product shopping for a client, so what the heck!
I like to change things up, so I just moved our table in another direction, added a white overlay, a cozy blanket…because sometimes when its such a long day, we grab the ipad and prop it up while we are eating to watch one of our favorite tv episodes.
With the cool weather we’ve been having a Cozy Valentines was definitely in the books!
