Strawberry Coconut Milk
Strawberry Coconut Milk, what a perfect thing to sip on during this cool February we’re having…and even more perfect to sip on this Valentines day, because it’s just that yummy!
So I saw this recipe for Strawberry Coconut Milk via Glitter Guide, and of course thought it sounded delicious…but unfortunately I’m not yet able to have dairy, or regular sugar….so I thought I could rewrite this recipe for people with an Autoimmune Disease like me, and viola!
Here’s my tasty version of Strawberry Coconut Milk with a couple of tweaks so us “AIP’ers” can enjoy some deliciousness this Valentines Day too!
Ingredients
2 cups vanilla-flavored coconut or almond milk
1 1/2 cups strawberries, juiced ( I use this juicer)
2 tablespoons raw honey
1/4 cup filtered water
Directions
First, Juice all of your strawberries in the juicer. Leave about 1 teaspoon out if you’d like to try the latte art portion. In a stove pot over low heat, combine strawberry juice, filtered water and raw honey. Stir frequently until the honey has dissolved and the mixture is incorporated. (roughly 10 minutes).
Remove from heat and let it cool.
Pour into two mugs.
Top with cooled strawberry juice like latte art.
